Quince Daiquiri(ish): A Three-Ingredient Twist on a Classic

One of my very favorite cocktails, The Classic Daiquiri, given a seasonal twist and (gasp!) thrown over copious amounts of crushed ice. Super easy to make, even easier to drink.

The only three ingredients you’ll need for this drink: rum, lime, and quince syrup.

Measure out 1.5 ounces of syrup. I use a jigger for all of my measuring so each drink is as delightful as the one before (yes I’m having two!). Syrup recipe below!

One ounce of freshly squeezed lime. Always go for fresh lime - the acids in old or preserved juice don’t pop as much as a freshly squeezed (and strained!) batch of citrus.

Add two ounces of Jamaican rum - I love Smith and Cross for it’s super funky, banana brûlée and vanilla notes. Then SHAKE lightly (crushed ice will add a bit of dilution) and strain into a cup of your choice. Top with a ridiculous amount of crushed ice.

Voila! A wonderfully fresh and delicious drink. If you want it a tad sweeter feel free to drizzle a little extra quince syrup on the top. Cheers!

How To Make Quince Syrup

THIS is a quince! An amazingly aromatic fruit that sort of looks like an apple who has been through some ish… don’t be put off by its odd lumps and bumps.. this fruit will elevate your cocktail to the next level.

Take two medium sized quince (I get mine from the PSU Farmers Market but Whole Foods also carries them in October and November), chop them up into small cubes, and toss into a pot with 2 cups of sugar and two cups of water. Simmer for 30 minutes, stirring occasionally - watch as the yellow syrup turns pink (a totally awesome chemical reaction of tannins and heat). I pulse the quince with an immersion blender once the fruit is soft and strain through a fine mesh strainer.

Pro tip: I often add an ounce of vodka to my syrups to preserve them even longer, especially with fresh fruits!
